QUALIFICATIONS:



A food production manager oversees the physical operations of a food production kitchen and the activities of the staff. He/She schedules production, controls inventory, and trains and motivates his/her employees. The maintenance of the production equipment and food storage systems is also part of the job:


Job Duties



  • Producing quality food products on schedule is the main goal of a food production manager.

  • He/She needs to be aware of every customer's needs and be competent to adjust schedules to fulfill them.

  • His/hers personnel duties include managing and motivating crews, sometimes on multiple shifts.

  • He/She is expected to interact with sales and marketing staffers to anticipate demands for newly introduced or seasonal food products.

  • Ensuring that the production equipment is regularly maintained is one of his/her job duties.

  • Food production manager ensures that food is stored at proper temperatures.

  • The food production manager oversees the physical operations of a food production kitchen and the activities of the staff. He/she schedules production, controls inventory, and trains and motivates his/her employees.

  • The maintenance of the production equipment and food storage systems is also part of the job. Knowledge of safe food handling and storage guidelines is required.


Skill Requirements



  • This job require keeping inventory levels adequate to meet production demands without creating excesses that incur loss.

  • Strong math and analytical skills to successfully order raw materials from local and remote vendors.

  • He/She needs computer skills to place and track orders and monitor production activities.

  • Excellent communication abilities with his/her crew, management and vendors are vital for consistently smooth production operations.

  • Knowledge of safe food handling and storage guidelines is required.

  • General Hospitality knowledge and interest in sustainability and sustainable food practices

  • Ability to operate Web based ordering system, process customer requests, changes to orders, menu updates and client profiles.

  • Proficient with word processing and spread sheet applications.

  • Posses the ability to meet Bon Appétit unit specific uniform standards for this position.

  • Utilize all Personal Protective Equipment’s per Bon Appétit guidelines.



  • Education: Degree from a post secondary culinary arts training program.

  • Experience: A minimum of 3 years as sous chef plus 2 years in similar position in a like volume and quality food service establishment.











CERTIFICATES, LICENSES, REGISTRATIONS:






  • Must have a valid driver's license - minimum of Class C (non Commercial Driver License) license and clean motor vehicle record.

  • Hazard Analysis and Critical Control Points (HACCP) training

  • ServSafe certified

  • Online Sexual Harassment Training

  • Regularly lift and/or move up to 40 pounds and may occasionally lift up to 50 pounds.

  • Push and Pull carts weighing up to 100 pounds

  • Specific vision abilities required by this job include close vision, color vision, depth perception, and ability to adjust focus.

  • Must consistently utilize all Personal Protective Equipment per Bon Appétit guidelines.

  • Must wear a cut resistance glove whenever using a sharp or potentially sharp tool or instrument.
